Spring favourite: juicy carrot muffin for Easter

Wanna surprise your family with something new & tasty this Easter?

In addition to the classic Easter menu of ham, scones, eggs and horseradish, how about adding something new to the festive table this year? If you're looking to surprise your family with a healthy and delicious Easter treat, this carrot and granola muffin is exactly for you! 🥕🧁

INGREDIENTS:
  • App. 200-240 g carrots

  • 100 g grated Secontaste Brewer's Granola

  • 2 eggs

  • 1 tbsp honey or other sweetener (I didn't add it and it was sweet enough 😊☝️)

  • A little cinnamon

  • A pinch of baking powder

  • App. 100 ml plant-based milk or water


    For the cream:

    100 g Greek yoghurt

    1 tsp honey




HOW TO PREPARE IT?
  1. Peel the carrots and grate them on a small hole grater.

  2. Add the eggs, the grated granola, cinnamon and baking powder and plant-based milk. Mix well

  3. Portion the mixture into muffin tins.

  4. Baked them in a preheated oven at 160 °C for about 45-50 minutes.

  5. In the meantime mix the yoghurt with the honey and spread it on top of the cooled muffins. Top it with carrot pieces to add extra flavour and texture.
